Recipe: Easy High Protein Chicken & Prawn Paella

Here’s a super simple, easy paella recipe ready in less than 20 minutes and perfect for a weeknight meal or meal prep.

Easy high protein chicken and prawn paella.

[Serves 1]

You’ll need:

  • 120g chicken breast, diced

  • 80g garlic prawns

  • 100 capsicum, diced or strips

  • 80g frozen peas*

  • 80g Mexican-style rice (packet)

  • 15g brown onion

  • 1tsp paprika

  • 1tsp olive oil

Method

  • In a large pan or wok add oil, chicken and capsicum

  • Add garlic prawns and stir until cooked through

  • Add peas, pre-cooked rice and smoked paprika. Stir through and serve up


* Forgot to snap a pic with the peas in there, sorry!
Note: increase the quantity by how many serves you’re wanting to make.
